Fig and Date Balls with Flaked Coconut

What You’ll Need:

2 cups Medjool Dates, pitted

1 cup dried Mission Figs

1 Tablespoon coconut oil

1 cups walnuts, chopped

3 Tablespoons water from soaked figs

½ cup flaked unsweetened coconut

What to Do:

Place walnuts into food processor and process until chopped.  Take out 1/3 cup of chopped walnuts and set aside.

Soak figs in boiling water for 10 minutes, and if dates are really dry, soak as well.  Drain and save reserve water.  Cut off ends of figs and put in food processor with dates, coconut oil, 2/3 cups of chopped walnuts and 2 Tablespoons of fig water.

Process until it make a firm paste.

Toss coconut flakes with walnuts in a medium size bowl.  Form date mixture into two-inch balls and roll in coconut and walnut. Place on baking sheet lined with parchment paper.

Keep in refrigerator until ready to eat.  Yields 20 -24 balls.
