Gluten-Free Chocolate Walnut Cookies

This is the easiest cookie in the world to make and you can literally add any dried fruit or nut to your liking.  So many possibilities!

What You’ll Need:

½ cup plus 3 Tablespoons Dutch-process cocoa powder

3 cups confectioners’ sugar

¼ teaspoon salt

¾ cups walnuts, roughly chopped

½ cup dried cherries

½ cup raisins

½ cup chocolate chips (optional)

4 large egg whites, at room temperature

1 Tablespoon pure vanilla extract

What to Do:

Preheat the oven to 350°F.

Line two baking sheets with parchment paper and spray with oil.

In a large mixing bowl, combine cocoa powder, confectioners’ sugar, salt, walnuts, dried fruit and chocolate. Whisk together or mix on low speed for 1 minute. With the mixer running, slowly add the egg whites and vanilla.

Mix on medium speed for 3 minutes, until the mixture has slightly thickened. (Do not over-mix it, or the egg whites will thicken too much).

Refrigerate dough for 30 minutes or so until it thickens.

Scoop 2 ounces of cookie dough or a generous tablespoon onto the prepared baking sheet.

Place the cookies in oven, and bake for 14 to 16 minutes, or until small thin cracks appear on the surface of the cookies.

Switch the pans halfway through baking.

Pull the parchment paper with the cookies onto a wire cooling rack, and let cool completely before removing the cookies from the paper. Store in an airtight container for up to 2 days.
