Chef Jodi has a fun suggestion for taking it this dish to next level: “I often add drained garbanzo beans and add curry powder and turmeric. This is only a basic roasting recipe. Feel free to be creative and change it up!”
Roasted Vegetables
1 head of broccoli cut into florets
½ cauliflower cut
1 cup mushrooms, sliced
2 cups brussel sprouts, sliced in half
1 Tablespoon fresh garlic, minced
3 Tablespoons olive oil
sea salt and fresh ground pepper to taste
Or 1/2 teaspoon red chili flakes
Preheat oven to 425 degrees
In a large bowl combine all veggies, add garlic, olive oil and salt and pepper and toss until well combined.
Spray large baking sheet with olive oil spray, add veggies to pan and spread evenly.
Roast 30 minutes flipping veggies after 15 minutes of roasting
