Apple Cinnamon Streusel Cake

This is a perfect fall recipe or everyday cake. The apples and cream cheese give it a wonderful flavor – so delicious!

What You’ll Need:

Apple Cinnamon Cake

2 large eggs

3 cups (2 large) Granny Smith apples, peeled and chopped

1 ¾ cup sugar, divided

1 ½ cup all-purpose flour

¾ cup light cream cheese, softened

½ cup butter, softened

½ cup sour cream

1 ½ teaspoon baking powder

1 teaspoon vanilla extract

¼ teaspoon salt

2 teaspoons ground cinnamon

Cooking spray

What to Do:

Preheat the oven to 350 degrees.

In a large bowl, beat together sugar, cream cheese, sour cream, butter and vanilla until well-blended, or about 4 minutes with a medium speed mixer (you can use a stand or hand mixer, whichever you prefer).

In a medium size bowl, combine the flour, baking powder and salt. Once well-combined, add to cream mixture, and beat at low speed until blended.

In a small bowl, combine ¼ cup sugar with cinnamon. In another bowl, add 2 tablespoons of cinnamon to apples and mix; stir apple mixture into batter mixture.

Coat a 9-inch springform pan with cooking spray; then pour batter into prepared pan and sprinkle top with streusel mixture. Place cake in oven and bake for 75 minutes, or until cake pulls away from the sides of pan. Cool cake completely on a wire rack.  Once cooled, drizzle with cream cheese glaze, and cut using a serrated knife.  Serve and enjoy.

Streusel

3 tablespoons flour

2 tablespoons brown sugar

1 teaspoon cinnamon

2 tablespoons chilled butter

What to Do:

In a small bowl, combine butter, cinnamon and brown sugar; put in flour one tablespoon at a time until well-combined.  Set aside.

Cream Cheese Glaze

3 tablespoons cream cheese, softened

1 ½ cup powder sugar

1 tablespoon milk

½ teaspoon vanilla extract

What to Do:

In a small bowl, cream together all ingredients until well-combined. Glaze should be smooth – if too thick, add a little milk.  Set aside to top on cooked cake.
