Apple Crisp with Goat Cheese Mousse

A delicious fall dessert – one that will keep you coming back for more! You can serve this in individual ramekins or in large baking dish – it’s completely up to you!

What You’ll Need:

Filling

4 pound (about 10 large Granny Smith Apples)

2 Tablespoons fresh orange juice

2 Tablespoons fresh lemon juice

1/2 cup granulated sugar

1/4 cup flour

2 teaspoons ground cinnamon

1/2 teaspoon nutmeg

Topping

1 ½ cup flour

3/4 cup granulated sugar

3/4 cup light brown sugar, lightly packed

1 cup rolled oats

3/4 cup sliced almonds

1/2 teaspoon salt

1/2 pound (2 sticks) unsalted butter, cut into cubes

Mousse

8 ounces light cream cheese, softened

4 ounces goat cheese, softened

¼ cup granulated sugar

1 Tablespoon milk

1 vanilla bean, split and seed scraped

1 teaspoon vanilla extract

What to Do:

Preheat oven to 350 degrees.

Peel, core and cut apples into chunks. Place apple chunks in a large bowl and add juices, sugar, flour, cinnamon and nutmeg. Toss until well combined.  Transfer to a greased 9-inch baking dish or 10 four-inch ramekins.

For the topping:  Combine flour, sugars, oats, almonds and salt into a large bowl. Using a pastry knife, put in cubes of butter.  Toss all ingredients until you have a crumble (or you can use an electric mixer with a paddle attachment).

Sprinkle topping evenly over apples and bake for 50-60 minutes until top is brown and bubbling. Transfer to wire rack and let cool about 30 minutes.  Enjoy!

For the mousse:  In a large bowl add softened cream cheese, goat cheese, sugar, vanilla seeds and extract. Using a hand mixer, beat all ingredients and add milk until light and airy. Cover bowl and refrigerate. Serve on top of apple crisp.

Finally, dollop Goat Cheese Mousse on crisp and serve warm.  Delicious!
