Shrimp Salsa Verde

You can make this simple, elegant dish with many varieties of fish, such as halibut, sea bass and tuna.  It’s completely up to you!

What You’ll Need

2 lbs. Fresh Shrimp, peeled and de-veined

1 Tablespoon butter

1 Tablespoon olive oil

1 Tablespoon fresh chopped or sliced garlic

1 cup chicken broth

¼ cup dry white wine

1 -2 Tablespoons fresh lemon juice

¼ cup chopped fresh flat leaf parsley

Sea salt and fresh ground pepper

What to Do:

Preheat oven to 300 degrees.

Heat large sauté pan with 1 Tablespoon olive oil and ½ Tablespoon butter. Add shrimp and sauté in hot pan for 3 – 4 minutes. Remove from pan and set aside.

Save pan dripping and add 1 Tablespoon olive oil and garlic and sauté a few minutes. Add chicken broth, white wine, lemon juice, parsley, salt and pepper. Simmer until all ingredients are reduced and flavorful. You may need to add more chicken broth and parsley as sauce reduces for approximately 8 – 10 minutes.

Drizzle Salsa Verde Sauce over shrimp and serve. Fabulous!

Option: You can also grill the shrimp. Make the Salsa Verde; marinate shrimp for 1 hour, and then grill.
