These are addictive and so delicious!  Great for holiday entertaining.  Feel free to add spinach to them, as well!

What You’ll Need:

1 – 1 lb. box Phyllo dough

½ pound butter

Filling

2 eggs, beaten

1 cup crumbled feta cheese

1 cup ricotta cheese

1 teaspoon dill

1 cup drained chopped spinach (optional)

½ teaspoon sea salt

¼ teaspoon fresh ground pepper

What to Do:

Preheat oven to 350 degrees.

In a medium size mixing bowl, beat eggs, add feta and ricotta, spinach, dill, salt and pepper. Mix well until well-combined, Set aside.

Place butter in microwave and melt. Unwrap phyllo dough and place between two damp towels. Remove 1 sheet of phyllo dough keeping the others covered. Brush with melted butter. Gently fold into thirds the long way, folding up the bottom third and folding down the top third.

Place a teaspoon of filling in the upper corner of the strip of dough.

Fold the top corner down over the filling. Place on a baking sheet covered with parchment paper. Continue folding triangles until all the dough is used.

Bake triangles for 11 – 12 minutes until golden brown.

Yields approximately 40, and you can freeze leftover triangles and bake later if you wish.
