Salmon Fish Cakes

This is a great recipe to replace traditional gefilte fish at Passover.  It also works as a fabulous (and gluten-free!) brunch or luncheon dish!

What You’ll Need:

2 lbs salmon filet

1 medium onion, diced

2 teaspoons minced garlic

1 Tablespoon fresh dill, chopped

1 Tablespoon flat leaf parsley, chopped

1 Tablespoon lemon juice

1 Tablespoon lemon pepper

1 tablespoon Old Bay seasoning

½ teaspoon sea salt

1 egg, beaten

 3 tablespoons olive oil

What to Do:

Using a food processor, process fresh salmon and pour into large mixing bowl.

Add onion and garlic and process until finely minced.  Then, add to salmon mixture.  Add dill, parsley, lemon juice, lemon pepper and Old Bay seasoning.

Mix well and add beaten egg and salt.

Heat large sauté pan with olive oil.  Pour salmon mixture into 2-inch patties and brown on each side for 2 -3 minutes. Place patties on paper towel to absorb excess oil.

Can serve at room temperature.

Makes about 24 patties.
