These potatoes are absolutely fabulous and easy to boot. Perfect for Easter and Passover this year!
What You’ll Need:
3 pounds baking potatoes, peeled & cut into 1 ½ inch cubes
1/3 cup olive oil
2 teaspoons fresh garlic, minced
1 ½ teaspoons dried oregano
1 teaspoon coarse sea salt
Fresh ground pepper
½ cup chicken broth or stock
1/3 cup fresh squeezed lemon juice
2 tablespoons fresh oregano, chopped
What to Do:
Preheat oven to 400 degrees.
In a large baking dish, add potatoes and coat with olive oil, add garlic, salt, pepper and dried oregano. Toss well, and bake for 15 minutes.
Add chicken broth and toss well, bake for 10 more minutes. Add lemon juice and toss. Bake for 15 – 20 minutes until potatoes are golden brown.
Sprinkle with fresh oregano and serve – enjoy!
