This is an authentic recipe from my beloved Mariela, my sous chef and right arm for Lajollacooks4u!
What You’ll Need:
3 cups unbleached flour
1 teaspoon baking powder
1 teaspoon salt
1/3 cup vegetable oil
1 ½ cups boiling water
What to Do:
In a large mixing bowl, combine flour, baking powder and salt. Whisk in vegetable oil and slowly add boiling water. On a floured surface knead dough for 5 minutes.
Sprinkle a larger baking sheet with flour. The dough will yield 18 tortillas. Pull about a 2 inch handful of dough, roll in hand, flatten a bit and place on baking sheet. Repeat until all tortillas are formed.
Cover baking sheet with a towel. Now, all tortillas will have to be rolled out into a 10 inch diameter. Using a dry surface, sprinkle with flour.
Have a bowl of flour ready, dip each tortilla disk into flour on both sides and roll out with a rolling pin into a 10 inch diameter.
Heat a large non-stick skillet, do not use oil. Place 1 tortilla in pan. When it starts to turn color (about 3 -5 seconds) flip over. Now heat tortilla about 1 minute per side until slightly brown in spots and remove from pan. You can place tortilla on a plate.
Repeat process until all tortillas are done.
Yield 15 – 20 tortillas
