Farro Tabouli

We absolutely LOVE this recipe. It’s so clean and healthy and the nutty flavor of the farro is just delicious.   Try it out this weekend for the Memorial Day holiday!

What You’ll Need:

1 1/2 cups farro

3 bunches flat leaf parsley, finely chopped

4 to 5 Persian cucumbers, chopped

1 cup cherry tomatoes, sliced

1/4 of a medium purple onion, chopped

1/4 – 1/3 cup fresh squeezed lemon juice

2 Tablespoons olive oil

1/2 teaspoon salt

What to Do:

In a medium size pot, boil 5 cups of water with a half teaspoon of salt.

Rinse farro, add to boiled water and simmer until farro is al dente, or about 20 to 30 minutes

Drain excess water from farro

In a large mixing bowl, add farro, chopped parsley, diced cucumbers, diced purple onion, sliced tomatoes. Mix together, and then add lemon juice and olive oil and salt.

Enjoy!  Serves 6 – 8
