This is another great after-school snack, as well as a nice appetizer during our team-building events, that is simple to whip up! You can also swap out the cucumber and add fresh zucchini slices or yellow squash.
What You’ll Need:
1/3 cup Labne cheese
2 tablespoons crumble feta cheese
1 – 2 Tbsp sun-dried tomatoes, chopped
1 Tbsp oregano, chopped
1 teaspoon minced garlic
1 large cucumber
Coarse salt and cracked black pepper, to taste
What to Do:
Slice the cucumbers very thinly. I used the #1 setting on my mandolin. Lay them out on a paper towel and sprinkle with salt (this helps to extract some of the water).
In a small bowl, add ingredients for the filling: Labne cheese, crumbled feta cheese, a couple of tablespoons of sun dried tomatoes, oregano and garlic. Season with coarse salt and cracked black pepper. Stir well to combine.
Then, blot the cucumbers dry! Add between a teaspoon and Tablespoon of filling, then add a sprig of fresh dill. Then starting on the thinner side, roll the cucumber around the filling. Secure the seam with a toothpick that has been broken in half or go all the way through if you have some fancy party toothpicks if you desire.
