Spiced Crusted Salmon with Ginger–Cilantro Yogurt Sauce

With this fresh fish recipe, your body and your tastebuds will be thanking you, it’s guaranteed! You can also use Halibut, Sea Bass or any other firm fish. Bake, Sauté or Grill the fish. You decide!

What You’ll Need: 

For Salmon

1 pound fresh fish of your choice
2 Tablespoons fennel seed
2 Tablespoons coriander seeds
1 teaspoon smoked or coarse sea salt
½ teaspoon fresh ground pepper
2 Tablespoons olive oil (divided)
1 teaspoon crushed garlic

What to Do:

Preheat oven to 400 degrees.

Place fennel and coriander seeds in a strong plastic bag and crush using a mallet. Add salt and pepper and combine together to make spice rub.

Clean and pat dry fish, place on a baking sheet and smear with olive oil and then garlic. Generously sprinkle fish with spiced rub and  refrigerate for 1 hour or so.

If cooking in a sauté pan, sprinkle rub on both sides of fish with olive oil and garlic. Heat pan with 1 Tablespoon olive oil and cook fish about 3 – 4 minutes per side depending on thickness of fish.

If you are baking or grilling fish the rub is sufficient on one side.

Bake or grill for 20 minutes.

For the Ginger-Cilantro Yogurt Sauce

¾ cup non-fat Greek plain yogurt
2 Tablespoons fresh cilantro, chopped
1 teaspoon fresh ginger, minced and peeled
1 Tablespoon fresh lime juice
1 teaspoon olive oil
salt & pepper to taste

In a small bowl, mix all ingredients together until well combined.

Serve with fish – enjoy!
