Mixed Green Salad with Fennel and Fresh Herbs
This is such an easy, clean and delicious salad! Add anything you want to it, such as edamame or fresh sprouts, to keep it healthy.
What You’ll Need:
1 head romaine lettuce,
4 large scallions, sliced
1 bulb fennel, chopped
2 Persian cucumbers, slices
3 stalks of fresh dill, chopped
Juice of 1 lemon
2 -3 Tablespoons olive oil
Sea salt and fresh ground pepper, to taste
What to Do:
In a large salad bowl or serving platter, place clean and sliced romaine. Add other veggies. Sprinkle with lemon juice, olive oil, salt and pepper and toss well.
