Roasted Broccolini with Sauteed Artichokes and Pine Nuts

What You’ll Need:

1 lb. fresh Broccolini (wash & pull off leaves)

1 ½ cup sliced artichokes (either frozen or canned drained)

1 Tablespoon minced garlic

4 Tablespoons olive oil

1/2 teaspoon red chili flakes

1/3 cup toasted pine nuts, optional

Coarse sea salt, to taste

What to Do:

Preheat oven to 400 degrees. Spray baking sheet with olive oil and place broccolini on pan and toss with 1 – 2 Tablespoons olive oil.  Season with coarse salt, minced garlic and red chili flakes. Roast 15 – 20 minutes.

In a large sauté pan, heat olive oil, add artichokes and sauté for a few minutes. Add minced garlic, red chili flakes and salt.  Sauté until vegetables are tender.

Toss artichokes and pine nuts with broccolini and serve!

Serves 6
