What You’ll Need:
2 Tablespoons olive oil
2 pound haricot green beans
1 pound Portabella mushroom or any mushroom of your choice
1 Tablespoon fresh garlic, minced
2 -3 Tablespoons Dijon
3 medium-sized shallots, peeled and sliced thin into discs
Salt and pepper, to taste
What to Do:
Heat olive oil in large sauté pan; add green beans and sauté 5 minutes add, minced garlic and mushrooms, Dijon, salt and pepper. Gently toss and continue to sauté until green beans are soft, about 15 – 20 minutes.
In a separate sauté pan, heat olive oil, add sliced shallot and cook about 5 minutes until crispy and golden brown. Place shallots on paper towel to absorb excess oil.
Place green beans on platter and add crispy shallots on top!
