We love coleslaw, especially in summer! Pair it with anything grilled. The flavors are so clean and delicious!
What You’ll Need:
4 – 6 cups shredded green cabbage (I buy a whole head of cabbage and slice it thinly by hand, it’s so easy and fresh)
1 cup shredded purple cabbage
1 cup grated carrots
6 thinly sliced green onions
1 cup almond silvers
2 Tablespoons toasted sesame seeds
¼ cup fresh chopped cilantro
Dressing
1/4 cup vegetable oil
¼ cup white wine vinegar or rice vinegar
¼ cup fresh squeezed lime juice
1 tablespoon honey
1 teaspoon ground ginger
Sea salt and fresh ground pepper to taste
What to Do:
In a small mixing bowl, whisk together, oil, vinegar, lime juice, honey and ginger to make dressing. Add salt and pepper to taste and set aside.
In a large bowl, mix green cabbage, purple cabbage, carrots, and green onions. Toss ingredients with dressing, add almonds, sesame seed and cilantro and toss until well blended.
Refrigerate for a few hours and serve cold
