What You’ll Need:
3 pounds of boneless chicken breasts & thighs
2 white onions, minced
3 -4 Tablespoons fresh lemon juice
½ cup olive oil
½ teaspoons saffron threads
1 ½ teaspoon sea salt
½ teaspoon pepper
What to Do:
Cut chicken into pieces that will fit on a skewer and place in a large mixing bowl. In a food processor, mince onions until finely chopped, add olive oil, lemon juice, saffron, salt and pepper and process until all ingredients are blended well.
Pour marinade over chicken pieces and toss until all the chicken is thoroughly coated. Cover bowl with foil, place in refrigerator and marinade overnight or for several hours.
Heat grill, spray skewers with cooking spray and slide chicken pieces on skewers. Place skewers on grill at medium high, turning skewers every 5 minutes and brushing with remaining marinade. Grill for 15 – 20 minutes.
I serve these delicious kebabs with tzadiki sauce, grilled veggies and pita. Yummy!!
