Stir-fried Cauliflower Rice

This recipe puts a healthy twist on the traditional stir-fried rice dish.  You can buy the bags of cauliflower rice from Trader Joe’s, or you can certainly take a fresh cauliflower and grind in a food processor! Also, don’t forget to use an assortment of fresh veggies of your choice.

 

What You’ll Need:

2 Tablespoons vegetable oil

5 Green onions, sliced

2 teaspoons fresh garlic, minced

1 cup mushrooms, sliced

1 cup snow peas

1 cup celery, chopped

3 cups cauliflower rice

2 Tablespoons soy sauce

1 egg

What to Do:

In a large sauté pan, heat oil.  Add green onions and garlic and sauté a couple of minutes.  Add other veggies and sauté for a few minutes.  Add cauliflower rice and soy sauce and sauté until rice is soft and tender.  Make a hole in the middle of the pan, add egg and scramble.

Easy and delicious!
