Spice-Roasted Leg of Lamb

This lamb is fabulous and is bursting with succulent flavors!  It’s a great addition to your Easter celebration.

What You’ll Need:

1- 5 pound leg of lamb
2 Tablespoons olive oil
4 cloves garlic, cut into small chunks
1/2 teaspoon fresh crushed pepper
1/2 teaspoon crushed Bay leaf
1/2 teaspoon margarine
1/2 teaspoon ground sage
1/2 teaspoon ginger
1/2 teaspoon thyme
1 teaspoon coarse sea salt

What to Do:

Preheat oven to 500°.

Place lamb on oiled baking sheet.  Cut 1/4 inch gashes all around the lamb.

In a small mixing bowl, combine all the spices – pepper, bay leaf, margarine, sage, ginger, thyme and salt.

Rub olive oil all over the lamb and into the gashes.  Sprinkle the spice blend into each gash along with one piece of garlic.

Roast lamb for 15 minutes and then reduce temperature to 350°. Roast for 1 1/2 hours. Tent with tinfoil and let rest 15 to 20 minutes, slice and serve.

Preserve the juices from the baking pan and from slicing and pour over sliced lamb.  Enjoy!
