Spanakopita

I received this recipe years ago from a dear friend and have been making it ever since! It’s delicious and feeds a crowd nicely!

What You’ll Need:

10 ounce package frozen spinach, drained

1 ½ cups crumbled feta cheese

1 ½ cups grated Monterey Jack Cheese

1 cup creamed cottage cheese

4 eggs, beaten

15 – 16 sheets filo dough, defrosted

1 cup melted butter

What to Do:

Preheat oven to 350 degrees.

Completely drain all excess water from spinach. In a large bowl, mix spinach with beaten eggs and all three cheeses. Season with salt and pepper.

Butter a large Pyrex dish. Using two damp towels, place filo dough on damp towel and cover with the other towel. Using a pastry brush, take one sheet of filo dough and brush with the melted butter. Carefully place in Pyrex dish and repeat until you have seven sheets of filo dough; each brushed with butter.

Add spinach mixture on top of the filo layers. Brush eight more sheets of filo dough with butter and place each one on top of spinach mixture. Butter the top layer and crimp edges together.

Bake 1 hour and let stand 15 minutes before serving.  Enjoy!
