Tomatoes are in-season right now, so what better way than to pair them with delicious Romano string beans? Both are available at your local Farmer’s market!
What You Need:
1 lb. Romano string beans (you can also use fresh green beans)
6-8 Roma tomatoes, diced (or 28-ounce can of crushed tomatoes)
2 Tablespoons olive oil
1-2 teaspoons fresh minced garlic
1 teaspoon sea salt
Fresh ground pepper and chili flakes, to taste
What to Do:
Clean and trim ends of Romano string beans, but leave long.
Clean and dice tomatoes.
In a large saute pan, add ½ cup water and boil. Add beans, cover and simmer for 10 minutes or until tender. Drain beans and dry pan.
Heat olive oil and add string beans, garlic and tomatoes. Saute for 8-10 minutes. Add sea salt and fresh ground pepper to taste. Serve warm. Delicious!
