Sauteed String Beans with Tomatoes and Garlic

String Beans

I fell in love with romano string beans during one of my first visits to Italy.   They’re long, flat and extremely flavorful – you can usually find them at your local farmer’s market.

What You’ll Need:

1 pound romano string beans (you can certainly use fresh string beans, too, if you can’t find romano)

4 – 5 ripe roma tomatoes, diced or 28 ounce can of crushed tomatoes

1 -2 teaspoons fresh minced garlic

2 tablespoons olive oil

Sea salt and fresh ground pepper to taste

What to Do:

Clean and trim ends off string beans, but leave long. Clean and dice tomatoes.

In a large sauté pan, add ½ cup water and boil string beans.  Cover and simmer for 10 minutes until tender. Drain beans and dry pan.

Heat olive oil, add string beans, garlic and tomatoes. Sauté for 8 – 10 minutes.  Add sea salt and fresh ground pepper to taste.

Serve warm, and enjoy!
