Rocky Road Chocolate Cake

This is one decadent cake – so moist and delicious!  You can be creative and add any toppings you want.

What You’ll Need:

¾ cup butter, softened

2 cups sugar

3 eggs

¾ cup sour cream

2 teaspoons vanilla

2 cups unbleached flour

1 teaspoon baking soda

½ teaspoon salt

¾ teaspoon baking powder

1 cup unsweetened cocoa

¾ cup milk

4 oz. dark chocolate, melted

What to Do:

Preheat oven to 350 degrees.

Grease 3 cake pans and line bottom with parchment paper, spray parchment paper and set aside.

In a medium bowl, sift together flour, baking soda, powder and cocoa. In a large mixing bowl, beat butter until creamy and add sugar. Beat until light and fluffy; add eggs one at a time. Beat in vanilla and sour cream.

Alternately add flour mixture and milk to butter mixture, beating on low after each addition until ingredients are well combined. Stir in melted chocolate and beat 1 minute. Divide batter evenly into prepared cake pans.

Bake 25 – 35 minutes until wooden toothpick comes out clean. Cool cakes in pan for 10 minutes on wire rack. Invert pans and let cake layers cool completely before frosting.

Double Chocolate Cream Cheese Frosting

¼ cup butter, softened

9 oz cream cheese, softened

2 teaspoons vanilla

3 oz unsweetened chocolate, melted

3 oz milk chocolate, melted

3 cups powered sugar

¼ cup milk

In a large mixing bowl, beat butter and cream cheese until creamy. Add vanilla and melted chocolate.

Gradually beat in powdered sugar, adding milk until thick and creamy. You may need to add more powdered sugar until you have a spreading consistency.

Frost Cake layers and then entire cake.  Finally, add rocky road topping.

Rocky Road topping

½ cup miniature marshmallows

½ cup chopped chocolate almonds, or peanuts or plain almonds

½ cup crumbled sugar cones or graham crackers

Chocolate Syrup

Combine dry ingredients and pile on top of cake and drizzle chocolate sauce over.  Enjoy!
