Roasted Tricolor Carrots

This is a flavorful and easy dish for anyone to prepare.  You can also add parsnips, squash or any other vegetable to this.  Enjoy!

What You’ll Need:

3 bunches small carrots or large multi-colored carrots cuts into 1/2 inch strips

2 – 3 Tablespoons olive oil

2 teaspoons cinnamon

1 teaspoon cumin

1/2 teaspoon allspice

Sea salt and fresh ground pepper, to taste

What to Do:

Preheat oven to 425 degrees.

In a large mixing bowl, toss carrots with olive oil, cinnamon, cumin, allspice, sea salt and pepper.  Spread carrots onto a baking sheet and roast for 20 minutes.  Place carrots on serving platter and serve.  So easy and delicious!

Serves 6.
