Roasted Tomato Sauce with Baked Feta

It doesn’t get any easier than this!  Use with flatbread to make a deliciously tasty appetizer.

What You’ll Need:

1 ½ pound cherry or vine ripe tomatoes

2 Tablespoons chopped fresh basil

¼ cup olive oil

1 teaspoon minced garlic

1 teaspoon sea salt

½ teaspoon fresh ground pepper or

½ teaspoon Crushed red pepper flakes

10 ounces fresh feta in a block

3 springs fresh thyme

What to Do:

Preheat oven to 400 degrees.

Slice tomatoes in half and place in a mixing bowl.  Add olive oil, basil, sea salt, red chili flakes and pepper. Toss until well-coated. Place tomatoes on small baking sheet and roast 15 – 20 minutes until blistery.

Place tomatoes in a bowl and mash them with a large fork. Place tomato sauce in baking dish and place feta in the middle, drizzle with olive oil and place thyme sprig on top. Bake for another 15 minutes until feta is golden on top. May need to broil for a few minutes. Serve with fresh crusty bread or pita.

You can add slice olives to the sauce if you like. Be creative!
