Roasted Salmon with Shallots and Fresh Herbs

This recipe is so fabulous!  You make can make the marinade for veggies, all kinds of fish, and chicken too.  So versatile and flavorful!

What You’ll Need:

1/2 cup chopped cilantro

1/2 cup chopped parsley

1/2 cup chopped fresh dill

1 – 2 teaspoons minced garlic

Juice and zest from 2 lemons

1/2 teaspoon sea salt

1/2 teaspoon fresh cracked pepper

Half a cup of olive oil

1 large shallot thinly sliced

2-pound large salmon fillet

What to Do:

Preheat oven to 375°

With a large mixing bowl combine all fresh herbs, salt and pepper and slowly drizzle in olive oil.

Spray a baking sheet with olive oil and place salmon fillet on baking sheet. Generously poor herb mixture over salmon fillet and artfully place shallot on top.

Roast about 18 minutes, or until salmon is flaky but not dried out.  Enjoy!
