Roasted Pumpkin and Butternut Squash

This is a perfect dish for the holidays!  Use as a side dish or savory seasonal snack.

What You’ll Need:

1 Butternut Squash

2 small pumpkins

2 – 3 Tablespoons Olive oil

1 Tablespoon cinnamon

Sea salt and fresh ground pepper

What to Do:

Preheat oven to 400 degrees.  Gently spear squash and pumpkin all over with a pairing knife. Place in microwave separately for 4 minutes so that squash can easily be cut in half.

Slice squash and pumpkin in half and scoop out seeds and stringy fibers.  Once seeds are removed, cut squash and pumpkins into 1-inch slices.  Brush both sides with olive oil and sprinkle with salt, pepper and cinnamon.  Place on baking sheet and roast for 20 minutes, flip slices over and roast for another 15-20 minutes until tender.  Once pumpkins have cooled down, peel and serve.

Drizzle some maple syrup to add some sweetness!
