This is a delicious and nutritious recipe -- perfect for these colder winter months!
What You'll Need:
1 Kabocha squash
1 - 2 Tablespoons olive oil
1 Tablespoon cinnamon
1 - 2 Tablespoons honey
What to Do:
Preheat oven to 400°.
Wash and dry the squash, then pierce all over with a pairing knife. Microwave for four minutes to soften the squash (This makes it so much easier to slice!)
Slice the top of the squash and then slice into 2-inch wedges. Take a spoon and scoop out all the seeds. Spray a large baking sheet with oil, place wedges on baking sheet and brush with olive oil on both sides. Sprinkle cinnamon on both sides and then drizzle honey on one side.
Roast squash for 20 minutes, turn each slice over. Roast for another 20 minutes until squash is golden brown. So easy and delicious!
