Roasted Cabbage and Onions

This recipe is ideal for St. Patty’s Day tomorrow.  Easy and delicious, too!

What You’ll Need:

1 head cabbage

1 large yellow onion

2 Tablespoons olive oil

Sea salt and fresh ground pepper

What to Do:

Preheat oven to 400 degrees

On a large cutting board slice cabbage into ¼ inch slices and place on baking sheet. Slice onion into ¼ inch slices and add to cabbage. Toss cabbage and onion with olive oil, salt and pepper.

Roast for 10 minutes and toss, and then roast for another 6 minutes until cabbage and onions are soft and moist.  Serve with your favorite protein and enjoy!
