Pickled Potato Salad

This dish is perfect for summer barbeques and get-togethers!  Enjoy.

What You’ll Need:

2 pounds small Yukon Gold potatoes
2 Tablespoons olive oil
1 cup pickled vegetables, finely chopped
1 teaspoon garlic powder
1/3 cup fresh dill, finely chopped
½ – ¾ cup of pickled vegetable brine or dill pickle brine
½ teaspoon fine sea salt
¼ teaspoon coarse black pepper

What to Do:

First, boil potatoes until tender.  Drain and let cool. Once potatoes have cooled, cut in half and peel with your hand. The peel will literally come right off. Placed peeled potatoes in a large mixing bowl and mash with 2 tablespoons of oil.

Add chopped pickled vegetables (can buy these in jars from Trader Joe’s), chopped fresh dill, garlic powder, sea salt, pepper, and the brine from the pickled vegetables.

Mix well and taste. Depending on your preferences, you may need to add a little more brine, dill pickle or garlic.  It’s entirely up to you.
