Peri Peri is a popular spice originating from South Africa. Try it as a marinade for grilling or pan-searing chicken or calamari. It is such a delicious recipe, Chef Jodi even included it in her cookbook!
What You’ll Need:
3 fresh chili peppers (Jalapeno, Poblano or similar, chopped)
½ cup fresh lemon or lime juice
½ cup Italian parsley, chopped
2 teaspoon minced garlic
1 teaspoon fresh ginger
¾ cup olive oil
2 teaspoons paprika
1 teaspoon sea salt
2 Tablespoon dried oregano
½ teaspoon cayenne
1 2-lb. chicken, cut into 8 pieces
What to Do:
In a food processor, add all ingredients and process until well combined. Adjust ingredients to taste.
Marinate chicken for a few hours and grill.
Serves 8 – enjoy!
