Mango and Manchego Quesadillas

This dish is not only hearty, but incredibly simple to make.  Other ingredients, such as shredded chicken, jalapenos or fish, can be added to this, as well.

What You’ll Need:

Flour tortillas
1 cup Machango, cut into slices
1 Mango, thinly sliced

What to Do:

Heat a large non-stick skillet without any oil.  Place a tortilla in the middle of the skillet.  Sprinkle one-half of the tortilla with Machengo and mango slices.  Heat 1 minute and flip.

Serve with guacamole, chimichurri – or eat, as is!
