Malva Pudding

Malva pudding

This is a South African favorite!  Try it with custard or whipped cream.

What You’ll Need:

1 cup sugar

1 egg

2 Tablespoons smooth apricot jam

1 cup flour

1 teaspoon baking soda

Pinch of salt

1 Tablespoon butter, melted

1 teaspoon white vinegar

1 cup milk

What to Do:

Preheat oven to 350 degrees.

In a large mixing bowl beat egg, add sugar and egg, and beat on high until fluffy.

In a separate bowl, sift flour, baking soda and salt and whisk until well combined and set.

In a small bowl, add vinegar to melted butter and set aside.

Add ½ cup milk to egg mixture and beat, slowly add half the flour mixture. Keep adding milk and flour alternatively and beat all ingredients together.  Add butter and vinegar and beat until well combined.

Pour mixture into a grease 8 inch Pyrex dish and cover with tin foil.

Bake for 45 minutes.

Cool on wire rack (the pudding should be a rich brown color).

Sauce

½ cup heavy cream

½ cup milk

½ cup sugar

2 Tablespoons butter

1/2 cup orange juice

In a medium size sauce pan add cream, milk and butter. Heat long enough to melt butter. Remove from heat and whisk in orange juice. Pour sauce over warm pudding and allow to absorb. Serve with warm custard or whipped cream!
