Homemade Cherry Pie

 This is a delicious summer dessert!  Tip: You can make the pie crust of your choice or use a store bought one.

What You’ll Need:

6 cups fresh or frozen cherries (pitted)

3 Tablespoons corn starch

¾ cup sugar or more

1 Tablespoon fresh lemon juice

1 egg

1 Tablespoon course sugar

 What to Do:

Place fresh cherries in pot on low heat and let juice release.  In a small bowl, mix sugar and cornstarch together. Remove cherries from heat and add sugar mixture. I like it tart more than sweet so sometimes I add lemon juice and stir it over low heat until it thickens enough for a pie filling.

Place rolled out crust in pie pan add filling. Make lattice for top of pie. Whisk egg with 1Tablespoon water and gently brush over lattice, sprinkle with course sugar

 Line baking tray with parchment paper and place pie on top to avoid dripping in oven.

Bake at 375 degrees for about 45 minutes – 1 hour until golden brown and bubbly. Keep checking on it as you don’t want top to burn.  You can add foil if it is browning too quickly.
