Grilled Vegetables

The great thing about this recipe is that you can use any variety of vegetable you want –  eggplant, fennel and carrots are also delicious options!

What You’ll Need:

1 bunch asparagus

3 zucchinis, sliced ½ inch thick

1 red pepper, sliced in rings

1 yellow pepper, sliced in rings

1 purple onion, sliced in rings

1 cup sliced mushrooms

3 Tablespoons olive oil

2 Tablespoons balsamic vinegar

Salt and ground pepper, to taste

What to Do:

Put sliced veggies in bowl and toss with olive oil, vinegar and salt and pepper.

Place on heated grill, turn after 5 minutes and remove from grill when done.

You can also add ½ teaspoon of red chili pepper if you want a bit of a kick!

Serves 4
