Garlic Truffle Pomme Frites

Garlic Pomme Frites NZN_0449

These gourmet fries are just to die for — and are a guaranteed crowd-pleaser for any event!

What You’ll Need:

3 pounds russet potatoes, peeled and sliced into fries or wedges
2 Tablespoons black or white truffle oil (can substitute with olive oil)
1 Tablespoons olive oil
4 cloves garlic, minced
2 Tablespoons flat leaf parsley, Chopped
2 Tablespoons grated Parmesan cheese (optional)
2 teaspoons coarse sea salt or kosher salt

What to Do:

Peel and wash potatoes and cut into long fries or wedges (about 4 -6 wedges depending on size of potato). Place in large bowl, cover with cold water.

Preheat oven to 450 degrees.

In a small mixing bowl, add truffle oil, olive oil, garlic and season with salt and pepper

Drain potatoes and dry with a paper towel (Note: the drier your potatoes are, the crispier they will be!) Spray a large baking pan with olive oil, and then spread potatoes out in a single layer.

Pour olive oil mixture over potatoes and toss until well-coated.  Roast until brown and tender, or about 35 minutes, turning every 15 minutes so they do not stick to the pan.

Toss with fresh chopped parsley and Parmesan.

Keep warm until ready to serve.

Serves 6
