Flatbread with Tahini, Cherry Tomatoes, and Feta

What You’ll Need:

3 cups fresh cherry tomatoes, washed & dried

¼ cup olive oil

1 heaping Tablespoon minced garlic

1 teaspoon fine sea salt

½ teaspoon red chili flakes

*1 homemade or store bought pizza dough

*½ cup homemade or store bought Tahini Sauce

½ cup sliced Kalamata olives

2/3 cup chopped feta

What to Do:

Preheat oven to 400 degrees or heat grill to medium

Place pizza stone on top shelf

Place whole cherry tomatoes on baking tray; add olive oil, minced garlic, salt and red chili flakes. Roast 15  – 20 minutes until blistering. Remove from oven or grill and smash tomatoes with a large fork. Set aside.  Turn oven up to 450 degrees for baking flatbread.

On a floured surface, roll out pizza dough about 16 inches by 10 inches place.

Place rolled-out dough on pizza lifter or if you do not have pizza stone, place dough on parchment lined baking tray.

Generously spread tahini sauce all over dough. Add cooked tomatoes, olives and feta. Bake 10 minutes or so until crust o is nice and golden and a bit crispy.

Slice and serve.
