With the weather about to get a little cooler, we are all about roasting vegetables this time of year!  Pumpkin and all kinds of squashes are abundant and so easy and delicious to prepare.  But how do we cut these gourds without killing ourselves? The trick of the trade is to pierce your butternut or acorn squash or pumpkin a few times all around and microwave it for four minutes.  Then, it will be soft enough to slice, de-seed and roast!

Here’s how we incorporate these delicious winter vegetables into our diet:
