Eggplant, String Beans and Mushrooms with Fresh Lemon
This recipe is so fresh and delicious – a perfect alternative to green bean casserole!
What You’ll Need:
2 Tablespoons olive oil
1 Japanese or a globe eggplant, sliced into 1 inch pieces
1 pound string beings, ends trimmed off
½ pound mushrooms, sliced
1 Tablespoon garlic, minced
1 Tablespoon lemon zest
1 Tablespoon lemon juice
1 teaspoon coarse sea salt
1/2 teaspoon crushed black pepper
What to Do:
In a large sauté pan, heat olive oil.
Add garlic. Sauté until garlic is translucent, and then add eggplant and string beans. Sauté for a minute. Next, add mushrooms, lemon juice, lemon zest, salt and pepper. Sauté until vegetables are tender, or about 15 minutes. Enjoy!
