Eggplant and Chickpea Saute

This is a simple and delicious vegetable dish that the whole family will enjoy!

What You’ll Need:

2 Tablespoons olive oil
1 medium onion, diced
1 Tablespoon fresh garlic, minced
2 Japanese eggplants, sliced
1 ½ cup mushrooms, sliced
1 cup garbanzo beans, drained
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon cumin
1 Tablespoon Zaatar
½ teaspoon coarse sea salt
½ teaspoon fresh ground pepper
1 Tablespoon lemon juice

What to Do:

In a large saute pan, heat olive oil.  Then, add onions and garlic and saute until onions are translucent.  Add eggplant and mushrooms, salt and pepper and all spices, and saute for 10 minutes or so.  Add garbanzo beans and continue to saute until eggplant is soft.

If desired, squeeze 1 Tablespoon lemon juice over vegetables – and serve!
