Salmon in a Mustard Herb Sauce

Serve up this simple, healthy and delicious protein entree with some veggies, and you have yourself the perfect menu for clean eating!

What You’ll Need:

1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
½ cup fresh Italian parsley
2 cloves garlic
¼ cup olive oil
2 tablespoons Dijon mustard
Juice of 1 lemon
Salt & pepper
1 large fillet of salmon (2-3 lbs.)

What to Do:

Preheat oven 400 degrees.

In food processor, mince garlic, and fresh herbs, add lemon juice and mustard and blend well. Slowly add olive oil and process until well blended.

Place fish on baking tray lined with parchment paper (easy to remove fish to platter) I have also placed fish with marinade on a cedar plank and grilled on medium heat with the lid down for 20 minutes!
Cover fish with mustard sauce bake at 400 degrees for 20 minutes or until done. Transfer to platter and serve.

Serves 8-10
