Sweet Potato Fries

Add a delicious side of sweet potatoes!

We all love a good turkey on the evening of Thanksgiving, but the sides are also very important to the feast! Chef Jodi has a mouth-watering dish that will certainly compliment the turkey on Turkey Day. I know I’m going to take this recipe home with me! How about you?

     Sweet Potato wedges with Brown Sugar Glaze

Ingredients:

½ cup unsalted butter

¾ cup packed dark brown sugar

¼ cup water

1 teaspoon salt

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

1 (3-inch) cinnamon stick

4 pounds sweet potatoes, peeled, cut in half crosswise and cut into

½ inch wedges

Cooking spray

Baking:

Preheat Oven to 400 degrees

In a medium saucepan melt butter over medium heat. Add sugar, water, nutmeg, salt, ginger and cinnamon; bring to a simmer. Cook for 5 minutes, stirring frequently until mixture is syrupy. Discard cinnamon stick.

In a large bowl, toss potatoes with sugar mixture until potatoes are well coated. Spray a large baking sheet with cooking spray and spread coated potatoes.

Bake at 400 degrees for 40 minutes or until tender stirring every 20 minutes. Serves approximately 12

You can make this 1 – 2 days ahead, store in refrigerator. Reheat at 350 degrees, covered for 20 minutes.
