Coriander, Fennel and Cumin Crusted Salmon

What You’ll Need:

2 pounds fish fillet
1 Tablespoon Cumin Seeds
1 Tablespoon Coriander seed
1 Tablespoon Fennel seeds
¼ teaspoon fresh ground pepper
1 teaspoon smoked or flaked sea salt
¼ cup olive oil
1 Tablespoon Dijon mustard
1 Tablespoon fresh, minced garlic

What to Do:

Preheat oven to 400 degrees or heat grill to medium

Using a coffee grinder or mortar and pestle, grind cumin, coriander, fennel seeds and sea salt and pepper until spices are fine.

Place fish on a large baking tray lined with parchment paper.

In a small mixing bowl add olive oil, Dijon and garlic and whisk until well blended. Smear mixture all over fish fillet. Heavily sprinkle coriander rub over entire fish.

Roast for 20 minutes or place on grill with lid down for 15 – 20 minutes.

Serves 4
