Garden Fresh Peruvian Grilled Chicken

At Lajollacooks4u, we’re all about using fresh, organic ingredients in our recipes and summertime is the season for harvesting loads of fruits and vegetables- limes, included! Use freshly squeezed lime juice for the best flavor for this perfect-for-summer-grilling dish!

What You’ll Need:

1 4-pound Whole chicken (or chicken parts)
5 cloves garlic, peeled and coarsely chopped
1/3 cup vegetable oil
2 -4 Tablespoons fresh lime juice
3 -4 Tablespoons white wine vinegar
1 ½ Tablespoon ground cumin
1 -2 Tablespoons smoked paprika
1 Tablespoon dried oregano
1 Tablespoon smoked or coarse sea salt
½ teaspoon fresh ground pepper

What to Do:

Preheat grill on high.

In a small mixing bowl add lime juice, white wine vinegar, cumin, paprika, oregano, salt and pepper, whisk until will blended, slowly drizzle in vegetable oil and whisk again until all ingredients are blended. Set aside.

Remove the giblets from the inside of the chicken and pat the outside of the chicken dry with paper towels; place in a bowl, breast side up with the legs facing you. Gently use your fingers to loosen the skin from the flesh over the breasts and legs, being careful not to tear the skin or push all the way through (you want the marinade to stay inside the bird). Spoon about 2/3 of the marinade evenly underneath the skin, and spread the remaining 1/3 evenly over the skin. Marinate the chicken in the refrigerator for at least 6 hours or overnight.

Place whole chicken on grill pan breast side up. Turn grill to medium high, place chicken on grill, put lid down and grill for 20 minutes. Baste with marinade and grill for another 20 minutes. Then turn chicken over and baste again. Repeat basting chicken and turning it over until down about 1 ½ hours. Let rest before carving.

Serves 4

BONUS TIP!

For a delicious side dish (featuring our Secret Ingredient of the Month), add grilled zucchini spears: cut zucchini into spears, smear with olive oil, season with salt and pepper, and toss on grill!
