With seasonal fruit and fresh whipped cream, this elegant dessert is so simple to prepare and will certainly wow your family and your dinner guests. This is the perfect spring time sweet, as well as a popular dish among our team-building, cooking challenges and gourmet cooking class guests!
What You’ll Need:
5 Large egg whites at room temperature
2/3 cup superfine granulated sugar
1 Tablespoon cornstarch
1 teaspoon Distilled white vinegar
Heavy Cream – whipped with powdered sugar
Fresh berries, Kiwi and any fruit of your choice
What to Do:
Preheat oven to 300 degrees.
Line a large baking tray with parchment and trace a 10-inch circle. Turn over parchment paper and place on baking tray.
In a small mixing bowl, whisk sugar and cornstarch together.
Beat egg whites with a pinch of salt using an electric mixer at medium speed until they hold soft peeks. Increase speed to medium-high and beat in sugar mixture 1 tablespoon at a time until all the sugar is added. Beat for 1 more minute.
Add vinegar and beat until meringue is glossy and hold stiff peaks about 5 minutes. Gently spread meringue inside circle on parchment paper. Bake until meringue is a pale golden about 45 minutes,(inside will be like marshmallows).
Turn oven off and let cool in oven with door open slightly for about 1 hour.
Gently remove meringue from parchment paper and place on serving platter. Add whip cream and fresh seasonal fruit. You can design the fruit beautifully to impress your friends!
Refrigerate before serving.
