Panko Crusted Turkey with Cajun Sauce

As we head into March, we’re heading into the Spring season! As we await those warm-weather days through the last of winter’s chill, here are some of Chef Jodi’s comfort recipes!

What You’ll Need:

6 boneless turkey breasts cut thin and pounded
1 cup flour
2 eggs
3 cup panko crumbs
1 ½ teaspoon garlic powder
1 ½ onion powder
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon oregano
1 ½ teaspoon sea salt
½ teaspoon pepper
½ cup vegetable oil

What to Do:

Preheat oven to 300 degrees.

In a small bowl combine garlic and onion powder, thyme, oregano, paprika, sea salt and pepper.

In a medium size bowl, whisk eggs with 4 tablespoons of water and add 2 teaspoon of spice mixture.

In another medium size bowl add Panko crumbs and toss with the remaining spice blend.

Wash and pat dry turkey breast, dredge in flour. Dip each breast into egg wash and then Panko crumb mixture.

Place on baking sheet lined with parchment paper. You can now store breaded turkey breast in refrigerator for several hours and pan fry when ready to serve or pan fry immediately.

Heat large sauté pan with oil that completely coats pan and is ½ inch thick. Once oil is heated add turkey breasts and fry each side about 5 – 6  minutes until it is a golden brown.

Place turkey on a baking sheet lined with a wire rack. Repeat until all turkey is done.

Serve immediately or place in heated oven until ready to serv.

Cajun Sauce

¼ cup Mayonnaise
¼ cup non fat Greek yogurt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
½ teaspoon sea salt
¼ teaspoon fresh ground pepper

In a small bowl combine all ingredients and serve with turkey breasts.
