Cooking up this recipe is a great way to ensure you get all your essential vegetables in one meal!
What You'll Need:
1 head of broccoli cut into piece
½ cauliflower cut
1 cup mushrooms, sliced
2 cups brussel sprouts, sliced in half
3 Tablespoons olive oil
1 tablespoon curry powder
1 teaspoon turmeric
1 teaspoon garlic powder
sea salt and fresh ground pepper to taste
What to Do:
Preheat oven to 425 degrees.
In a large bowl combine all veggies, add olive oil, curry and garlic powder, turmeric and salt and pepper and toss until well combined.
Spray large baking sheet with olive oil spray, add veggies to pan and spread evenly.
Roast 30 minutes flipping veggies after 15 minutes of roasting.
