Cinnamon Rolls

How do you plan on spoiling your darling mom this Mother’s Day? Whether you’re preparing a Sunday brunch or a delicious dessert, this is the perfect recipe!

What You’ll Need:

1 ½ sticks (12 Tablespoons) unsalted butter at room temperature
1/3 cup light brown sugar, lightly packed
½ cup chopped pecans in large pieces
1 package (2 sheets) frozen puff pastry, Defrosted

For the filling:
2 Tablespoons unsalted butter, melted and cooled
1/3 cup light brown sugar, lightly packed
3 teaspoons cinnamon
1 cup golden raisins

What to Do:

Preheat oven to 400 degrees.

Place a 12-cup muffin pan on a baking sheet lined with parchment paper.

In a medium size bowl using an electric hand mixer, combine 12 tablespoons of butter with 1/3 cup brown sugar. Place a rounded tablespoon of the mixture in each muffin cup and distribute pecans evenly on top of the butter and sugar mixture.

Lightly flour a stone or wooden surface. Unfold one pastry sheet with folds going left to right. Brush the entire sheet with half of the melted butter, sprinkle each sheet with 1/3 cup of the brown sugar, 1 ½ teaspoons cinnamon and ½ cup of the raisins. Roll the pastry up snugly like a jelly roll finishing with the seam side down.

Trim the ends of the roll about ½ inch and discard. Slice each roll into 6 equal pieces about 1 ½ inches wide. Place each piece, spiral side up in 6 of the muffin cups.

Repeat entire recipe with the second sheet of pastry dough to make 12 sticky buns.

Bake for 30 minutes until buns are golden brown. Allow to cool for 5 minutes only and invert onto parchment paper (ease the filling and pecans out with and spoon and spread over buns).
