What You’ll Need:
1 whole chicken, cut into 8 pieces
1 cup chutney
3/4 cup lemon juice
2 teaspoons curry powder
2 tablespoons brown sugar
1 tablespoon olive oil
1 teaspoon minced ginger
3 tablespoons cup chopped basil or coriander
1 tablespoon lemon rind
1 lemon cut into wedges
What to Do:
Combine all ingredients for marinade except lemon wedges
Marinade 2 hours or overnight
Bake at 350 degrees skin side down for 30 minutes, turn over and bake another 30 minutes
Add lemon wedges last 20 minutes
